天目山镇的小番薯品种叫馨香。口感糯粉、甜,在番薯家族200多个品种中,馨香是其中比较好的一种。
馨香个头是迷你型,平均一个一两半左右,黄心,体型细长,表皮呈鲜红色。具有板栗口感小番薯成为具有天目山镇地域特色的特产之一。当地人爱把小番薯用土灶蒸着吃。从地里收割的小番薯,冲洗干净,去除表面一层根须;放入大锅内,加入浅浅的一层水,盖上锅盖;灶膛上加入柴火,大火烧上30分钟;半个小时以后,打开锅盖,香喷喷的小番薯就出锅了。
经过高温的焖煮,小番薯有的表皮裂开,露出了嫩黄色的心。剥掉表皮,露出像板栗一样的黄心。轻轻掰开一段,吃上一口,绵软细腻,喷香甜糯。
小番薯里,含有丰富的淀粉、膳食纤维、胡萝卜素、维生素A、B等10多种微量元素和亚油酸,营养价值很高。经常吃小红薯,能够降低胆固醇,减少皮下脂肪,健脾胃,对肾脏有好处。
